| dc.description.abstract | Çalışmada Konya bölgesinden toplanan Kızılcık (Cornus Mas L) meyvesinin DPPH radikallerini süpürme etkisi, ß- karoten- linoleik asit sistemindeki etkisi, indirgeme gücü, toplam fenolik içeriği , CUPRAC, Proantosiyandin kompozisyonu ve ABTS metodu gibi deneylerle antioksidan aktivitelerinin belirlenmesi amaçlandı. Kızılcığın antioksidan aktivitesi, BHA, BHT, troloks gibi standart antioksidanlar ile kıyaslandı. Kızılcığın bazı fenolik bileşenleri HPLC ile tayin edildi. | en_US |
| dc.description.abstract | In this study ,Cornus mas L collected in Konya ,antioxidant capacities of Cornus mas L. fruit was aimed at determining the antioxidant activity (DPPH free radical-scavenging, ß-carotene/linoleic acid systems), reducing power, total phenolic content and CUPRAC, proanthocyanidin contents and ABTS. Those various antioxidant activities were compared to standard antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), and trolox. Some of the phenolic compounds were determined by HPLC. | en_US |
