As a result of a 68-day intensive fattening, fatty acids in tissue samples taken from the leg; shoulder; breast, and rib parts of the lamb carcasses were examined. According to our analysis, the total saturated fatty acid (SFA) in the leg, shoulder; rib, and breast, were-found-to be 46.33%, 45.18%, 44.56%, and 40.93%, Monounsaturated fatty acid (MUFA) were 45.44%, 47.04%; 48.21%, rand 52.72%, polyunsaturated fatty acid (PUFA) were 4.74%, 4.10%, 3.79%; and 3.62%, and CLA were 0.89%, 0.84%, 0.81%; and 0.91%, respectively.
