Bu bitkilerin Antioksidan kapasiteleri beş farklı metodla tayin edildi. Bu metotlar, Folin metodu, DPPH serbest radikal süpürme etkisi, İndirgeme metodu, ß-Karoten-linoleik asit sistemi ve Cuprac metodudur. Sonuçlar sentetik antioksidan bileşikler (BHA ve BHT) ile kıyaslandı. Bitkilerin fenolik bileşenleri ve yağ asidi kompozisyonları sırasıyla HPLC ve GC ile tayin edildi. Antimikrobiyal etkisi ise dört farklı bakteri ile mikrodilüsyon metoduyla belirlendi. Centaurea türlerinin fenolik madde ve doymamış yağ asidi açısından zengin olduğu anlaşıldı. Aynı zamanda bazı türlerin bakterilere karşı etkili olduğu bulundu.In this study, 12 Centaurea species collected in Konya, were determined some chemical and biological properties. Antioxidant capacities of Centaurea species were determined by five different methods. This methods are folin method, DPPH radical scavenging method, reducing power, ß-carotene-linoleic acid system and Cuprac method. Results were compared with synthetic antioxidant compund (BHA and BHT). Phenolic compounds and fatty acid compositions of plants were determined by HPLC and GC respectively. Antimicrobial activity of drog is detected by microdilution method against four bacteria. It is understood, some Centaurea species has been plentiful in terms of phenolic compunds and unsaturated fatty acid.
