Genomic DNA was extracted from soybean by CTAB method and EZ1 nucleic acid isolation system. A sensitive qualitative detection method for soybean, using the polymerase chain reaction was developed with E5/LE6 primers, produced a 195 bp product. However, the antioxidant activity of methanolic extract of soybean from Turkey by using DPPH and ABTS radical scavenging assays, showed higher antioxidant activity with 53.19 +/- 0.87% and 45.10 +/- 0.32%, respectively. Fatty acid compositions and several phenolic acids and flavonoids of soybean extract were analysed by gas and high performenace chromatography.
