As regards the fatty acid composition, major fatty acids are palmitic acid, stearic acid and arachidic acid as SFA (saturated fatty acid); oleic acid as MUFA (monounsaturated fatty acid); linoleic acid and linolenic acid as PUFA (polyunsaturated fatty acid). While linoleic acid contents are found to be between 35.99% (Interdonato) and 44.86% (Encore), oleic acid contents are found as 21.72% (Robinson) and 32.16% (Interdonato) for the 2008 harvest year. In addition, linolenic acid contents are valued at 3.58% and 8.69% for lemon seed oils and 4.56% and 4.96% for orange seed oils for 2009 harvest year, respectively.
