Özet
Bu çalıma ile Türkiye'deki marketlerde satılan cipslerin trans ya asidi bileimi ve ya asidi kompozisyonu belirlenmitir. Patates cipsi (35 adet) ve mısır cipsi (22 adet) olmak üzere 57 adet cipsin analizi gaz kromatografik teknii ile yapılmıtır. Yapılan analizler sonucunda cipslerde 19 farklı ya asidi bulunmutur. Hem patates hem de mısır cipsi numunelerinde major ya asidi olarak C18:1, oleik asit (%35.29?46.83) tespit edilmitir. Oleik asitten sonra yüksek oranlarda bulunan ya asitlerinin ise C16:0, palmitik asit (%24.03?40.12) ve C18:2n6, linoleik asit (%9.13?34.94) olduu gözlenmitir. Doymu ya asitleri (SFA), tekli doymamı ya asitleri (MUFA) ve aırı doymamı ya asitleri (PUFA) sırasıyla %27.98?46.57, %35.73?47.57 ve %9.86?35.90 olarak belirlenmitir. Trans ya asitlerinden C16:1t, palmitelaidik asit, C18:1t, elaidik asit, C18:2tt, linolelaidik asit ve C18:2tc, trans9-cis 12 oktadekadienoik asit, sırasıyla, %0.01?0.07, %0.06?0.93, %0.05?0.33 ve %0.04?0.21 olarak tespit edilmitir. Cipslerdeki toplam trans ya asitlerinin (TFA) %0.02? 1.35 arasında olduu görülmütür.
In this study, trans fatty acid and fatty acid composition of chips sold in markets in Turkey were determined. Potato chips (35 samples) and corn chips (22 samples) were analyzed by using GC. After analysis, 19 different fatty acids were determined in chips. C18:1, oleic acid (35.29-46-83%) was major fatty acid in all samples. Other predominant fatty acids were C 16:0, palmitic acid (24.03-40.12%) and C18:2n6, linoleic acid (9.13-34.94%). The percentages of saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs) ranged between 27.98-46.57%, 35.73-47.57% and 9.86-35.90%, respectively. In trans fatty acids, C16:1t, palmitelaidic acid, C18:1t, elaidic acid, C18:2tt, linolelaidic acid and C18:2tc, trans9-cis12 octadecadienoic acid, were ranged between 0.01-0.07%, 0.06-0.93%, 0.05-0.33% and 0.04-0.21%, respectively. Total trans fatty acid in chips were determinated 0.02-1.35%.
