Marmara Bölgesinde Üretilen Pleurotus ostreatus (Jacq.) P. Kumm. (Kayın Mantarı)’un Üretimi ve Yaygınlaşması

| dc.description.abstract | Kültür mantarlarının yetiştirilmesine ilk defa 1650 yılında Fransa’da, ticari boyutta ilk üretimine ise 1880’lerde Amerika Birleşik Devletleri’nde başlanmıştır. Türkiye’de mantarların kültüre alınma çalışmalarına ilk 1960’larda başlanmış, 1990’larda ticari bir değer kazanarak sektörleşen mantar üretimi, 2000’li yıllarda önemli bir yatırım alanına dönüşmüştür. Kültürü yapılan mantarlar sıralamasında ilk sırayı “beyaz şapkalı mantar” olarak da bilinen Agaricus bisporus türü mantar alırken, kayın, kavak ya da istiridye mantarı olarak bilinen Pleurotus ostreatus türü mantarın ise ikinci en çok üretilen mantar çeşidi olarak karşımıza çıktığı görülmektedir. Bu araştırmada, Marmara Bölgesi’nde Pleurotus ostreatus’un mevcut üretim durumu ve bölgedeki üretim yoğunluğu araştırılmıştır. Bu amaçla bölgede 6 mantar üreticisi işletme ile yüz yüze görüşülerek bir anket çalışması yapılmıştır. Üretici firmaların kompost ve misel de üreten işletmeler olmasına dikkat edilmiştir. Araştırma sonuçlarına göre; görüşülen mantar işletmelerinin tesis büyüklüklerinin optimum düzeyde olduğu görülmüştür. Üretici firmalar, ortalama olarak %23 düzeyinde bir verimle istiridye mantarı üretmektedir. İşletmelerin bu verim düşüklüğünde en önemli sebeplerden birinin istiridye mantarı üretimindeki girdi fiyatlarının yüksekliği olduğu görülmüştür. İstiridye mantarı üretiminin yaygınlaşması için özellikle kompost içeriğinde yer alan bitkisel materyallerin fiyatlarının daha normal seviyelere çekilmesinin önemi ortaya çıkmıştır. | en_US |
| dc.description.abstract | Cultivated mushrooms have been grown firstly in France in 1650 and commercially produced for the first time in the United States of America during 1880s. In Turkey the practice of cultivating mushrooms have been started firstly in 1960s, the production of cultivated mushrooms had gained a commercial value and turned into an industry in 1990s and an important area of investment in 2000s. Amongst those mushrooms that have been cultivated, Agaricus bisporus (also known as “common mushroom”) comes first and Pleurotus ostreatus appears as the second most produced mushroom type. This research investigates the current production status of Pleurotus ostreatus in Marmara Region and the density of production in the region. In order to do this a survey study had been conducted by meeting 6 different mushroom producer company face-to-face. The companies have been carefully choosen from those who are also producing composts and mycelium. According to the results of the research, it’s been seen that the size of the interviewed mushroom companies are at optimum levels. The producer companies are producing Pleurotus ostreatus with an average of 23% efficiency. It’s been found out that one of the most important reasons in this low efficiency levels is the high input prices for the production of Pleurotus ostreatus. The importance of pulling the prices of the herbal materials of the components of compost to more normal levels comes up in order to extend the production of Pleurotus ostreatus. | en_US |
