| dc.description.abstract | Bu çalışmanın amacı otomatik yumurta toplama sistemi ve el ile toplanan yumurtaların farklı sıcaklıklarda depolanmasının yumurta kalitesi üzerine etkilerini araştırmaktır. Bu amaçla araştırmada toplam 300 adet sofralık tavuk yumurtası kullanılmıştır. Muamele grupları; kümeste el ile toplanan yumurtalar (K) ve otomatik yumurta toplama sistemi ile toplanan yumurtalar (M) olmak üzere toplam iki gruptan oluşturulmuştur. Toplanan yumurtalar 28 gün süresince oda sıcaklığında (25±2°C) ve buzdolabı sıcaklığında (4±2 °C) depolanmıştır. Araştırma 2 x 2 tesadüf parselleri faktöriyel deneme desenine göre yürütülmüştür. Araştırma süresince her hafta her gruptan rastgele alınan 10 adet yumurtada yumurta ağırlık kaybı, özgül ağırlık, kabuk kırılma direnci, ak yüksekliği, Haugh birimi, sarı indeksi, ak pH, sarı pH özellikleri tespit edilmiştir. Ayrıca, her gruptan 5 adet yumurtada da kabuk mikrobiyal yükü tespit edilmiştir. Araştırma sonucunda, yumurta toplama sistemi x depolama sıcaklığı interaksiyonunun bütün periyotlarda, tüm yumurta kalitesi üzerine etkisi önemsiz çıkmıştır. Yumurta toplama sistemlerinin Toplam Mezofilik Aerobik Bakteri üzerine etkisi sadece depolamanın 28. gününde önemsiz olurken, diğer periyodlarda önemli bulunmuştur (P<0.05). Kümesten el ile toplanan yumurtalarda otomatik sistem ile toplanan yumurtalara göre daha fazla Toplam Mezofilik Aerobik Bakteri tespit edilmiştir (P<0.05). Genel olarak yumurta toplama sistemlerinin yumurta kalitesi özellikleri üzerine etkisi önemsiz olmuştur. Depolama süresi boyunca, depolama sıcaklığının kabuk kırılma direnci hariç diğer bütün kalite özellikleri üzerine etkisi önemli çıkmıştır (P<0.05). Araştırma sonuçlarına bakıldığında, depolama süresince buzdolabı şartlarında depolanan yumurtaların oda şartlarında depolanan yumurtalara nazaran kalite değerlerini daha iyi koruduğu görülmektedir. | en_US |
| dc.description.abstract | The aim of this study was to investigate the effects of different storage temperature on automatic egg collection system and hand-held eggs in the egg quality. For this purpose, a total of 300 table chicken eggs were used in the research. Treatment groups were consisted from as below: The eggs collected by hand (K) and the eggs collected by automatic egg collection system (M). The eggs were stored at room temperature (25 ± 2 ° C) and refrigerator temperature (4 ± 2 ° C) during 28 days. The research was carried out in a 2 x 2 factorial arrangement. During research period, egg weight loss, specific gravity, eggshell strength, albumen height, Haugh unit, yellow index, albumen and yellow pH was determined in the 10 eggs randomly taken from each group. In addition, microbial load of eggshell was determined in the 5 eggs randomly taken from each group in the during research. As a result of the study, the effect of egg collection system x storage temperature interaction on all egg quality was insignificant in all periods. The effect of egg collection systems on Total Mesophilic Aerobic Bacteria was significant in all periods except for the 28th day of storage (P <0.05). In the eggs collected by hand from the cage were detected the more Total Mesophilic Aerobic Bacteria than the eggs collected by automatic system. (P <0.05). In general, the effect of egg collection systems on egg quality characteristics was insignificant. In the during storage, the effects of storage temperature on the all quality traits was significant except for eggshell strength. (P <0.05). According to the results, it is seen that the eggs stored in refrigerator conditions preserved the quality values better than the eggs stored in room conditions. | en_US |
