Abstract
Bu çalışmada şeker üretim prosesi içinde oluşan şerbetlerin ve proses sonunda açığa çıkan melas ürünün içindeki kül miktarları iki farklı yöntemle incelenerek bu iki yöntem arasındaki ilişki ortaya konulmuştur. Yöntemlerden biri iletkenlik külü olan, ölçümü hızlı, uygulaması kolay ancak suda çözünmeyen kül miktarlarını ihmal ederek sonuç veren yöntemdir. Diğeri ise hem suda çözünen hem de çözünmeyen kül miktarlarını gösteren ancak analizi uzun zaman alan ve uygulaması kolay olmayan yöntem olan gravimetrik kül yöntemidir. Çalışmanın amacı daha kısa zamanda daha doğru bir sonuca, kolay ve hızlı olan iletkenlik yöntemiyle ölçülen sonucu kullanarak gravimetrik kül değerine ulaşmak olarak tanımlanmaktadır.
In this study, the juices are produced by the sugar production process and the molasses that is the byproduct of the same process were analyzed by two different methods. One of them is the conductometric method which is very easy and gives rapid result, the other is gravimetric method that is difficult and lon way of determination the ask amount of the juice and molasses. The main aim of this study is to find a relation between the gravimetric and the conductometric analysis results. Although the conductometric ash method is very easy, the result is not certain because of the nonsoluble materials in the solutions. Also the gravimetric method is the difficult way of this analysis, its result is more confidental than yhe other way. So it is a necessity to fnd a relation between these two methods to reach the certain result by the most easier way.
