Özet
Bu araştırmada Niğde İli Damızlık Sığır Yetiştiricileri Birliğinin (Niğde DSYB) üyelerine yönelik
süt üretimindeki lojistik faaliyetlerin gıda güvenliği temel alınarak incelenmesi ve araştırma alanındaki süt
sektörü yapısının belirlenmesi amaçlanmıştır. Ayrıca Niğde DSYB’nin “Türk Gıda Kodeksi İçme Sütleri
Tebliği” kapsamında istenilen kalitede süt tedariki için toplama ve taşıma modelini belirleyerek toplam
bakteri yükünün minimizasyonunu sağlayacak matematiksel modeller üzerinden uygulama ortaya konmaya
çalışılmıştır. Bu amaçlar doğrultusunda süt sığırcılığı yetiştiricileri ile 71, süt toplayıcıları ve toplama
merkezleri ile 25, süt işleme tesisleriyle 3 adet anket yüz yüze görüşme yöntemiyle yapılmış ve bölgede
faaliyet gösteren Sivil Toplum Örgütleri ile sözlü mülakat yöntemiyle bilgi sağlanmıştır. Ayrıca Niğde
DSYB’nin pazarladığı çiftlik sütlerinden 12 ay boyunca numuneler alınarak laboratuvarda analizleri
yapılmıştır. Elde edilen verilerle süt sığırcılığı işletmelerinde ekonomik analiz yapılmıştır ve işletme başına
düşen süt sığırı varlığı 58,06, ortalama sağımda tutulma süre 275 gün ve inek başına verim 20.35 kg/gün
olarak hesaplanmıştır. Sütlerde toplam bakteri sayısının kontrolü amacı ile işletmelerden toplanan sütlerin
tanklara yükleme öncesi, yükleme sonrası ve fabrikaya varış olmak üzere analizleri yapılmıştır. Toplam
bakteri sayısının zamanla artışı incelenmiştir. Önerilen kalite ve hijyen esaslı toplama, depolama ve
ulaştırma modeli ile süt işleme tesislerinin kaliteyi ve gıda güvenliğini esas alan tedarik zinciri
yönetimlerinin sürdürebilirliği sağlanacaktır Ayrıca süt sığırcılığı yapan işletmelerde kalite ve hijyen
konusunda bilinç düzeyi artarken ürettikleri sütü daha yüksek fiyata pazarlayabileceklerdir.
In this study, it was aimed to examine the logistics activities in milk production for the members of the Niğde Cattle Breeders' Association on the basis of food safety and to determine the structure of the dairy sector in the research area. In addition, within the scope of Niğde DSYB's "Turkish Food Codex Communique on Drinking Milk", an application has been tried to be put forward through mathematical models that will ensure the minimization of the total bacterial load by determining the collection and transportation model for milk supply of the desired quality. For these purposes, 71 surveys with dairy cattle breeders, 25 surveys with milk collectors and collection centers, and 3 surveys with milk processing facilities were conducted by face-to-face interview method, and information was provided by verbal interview method with Non-Governmental Organizations operating in the region. In addition, samples were taken from the farm milk sold by Niğde DSYB for 12 months and analyzed in the laboratory. With the data obtained, economic analysis was carried out in dairy farms and the presence of dairy cattle per farm was calculated as 58.06, the average milking period was 275 days, and the yield per cow was calculated as 20.35 kg/day. In order to control the total number of bacteria in the milk, the milk collected from the enterprises were analyzed before loading into the tanks, after loading and on arrival at the factory. The increase in the total number of bacteria was investigated in the time dimension. Sustainability of the proposed quality and hygiene-based collection, storage and transportation model and the supply chain management of milk processing plants based on quality and food safety will be ensured. In addition, while the level of awareness about quality and hygiene in dairy cattle enterprises will increase, they will be able to sell the milk they produce at a higher price.
