Özet
Araştırma kapsamında, Türkiye piyasasında en çok tüketilen 5 farklı firmanın ekonomik bedeli en düşük kanatlı eti içerikli salam sosis ve sucuk örneklerinin ilgili Tebliğ ve standartlara uygunluğu ile mineral madde içerikleri belirlenmiştir. Salam sosis ve sucuk örneklerinde su aktivitesi (aW), pH, sertlik (penetrometre), renk değerleri(L*,a* ve b*), yağ, protein, su ve kül içeriği ile mineral maddelerden Ca, P, Fe, Mg, Mn, Zn, Na, K ve ağır metallerden bulaşma riski en yüksek olan Pb ve Cu düzeyleri ile nitrit nitrat kalıntı düzeyleri analiz edilmiştir. Ülkemizde üretilen mekanik ayrılmış kanatlı eti içerikli et ürünleri, yürürlükte olan Et Ürünleri Tebliği ve ilgili Standartlara uygun bulunmakla birlikte, Ca içeriklerinin, FAO'nun belirlediği günlük alım limitleri için problem oluşturmadığı ve mekanik ayrılmış kanatlı eti içerikli et ürünlerinin bazı mineraller ve hayvansal protein içeriği açısından iyi bir besin kaynağı olabileceği sonucuna varılmıştır.
In this study, mineral contents of mostly consumed 5 brands of salami, sausage and sucuk produced from poultry meat with the cheapest cost in Turkey were determined and their conformity to Turkish standards were investigated. Water activity(aw), pH, and penetrometer values, colour values (L*, a*, b*), fat, protein, moisture and ash contents, minerals (Ca, P, Fe, Mg, Mn,Zn, Na and K), highly contagious heavy metal (Pb and Cu) contents and residual nitrate and nitrite levels of salami, sausage and sucuk were analyzed. It was concluded that salami, sausage and sucuk produced from poultry meat in our country complied with the Turkish Regulations for Meat Products and the related standards being in force with respect to these properties. Ca contents of these products were determined to be appropriate for daily intake limits assigned by FAO and it was also concluded that meat products produced from mechanically deboned poultry meats were rich in some mineral substances and a good source of nutrition in terms of animal originated protein content.
