Özet
Bu çalışma, Türkiye'nin diğer bölgelerindeki illerden farklı iklim ve sosyo-ekonomik yapıya sahip Şanlıurfa İli Merkez ilçe kentsel alanda tüketicilerin süt tüketim düzeylerini ve tüketim davranışlarını incelemek amacıyla yapılmıştır. Bu amaçla kullanılan veriler, farklı gelir düzeyine sahip ailelerden anket yoluyla elde edilmiştir. Araştırma sonuçlarına göre, aile başına aylık süt tüketimi ortalama 16,4 litre, yıllık kişi başına süt tüketimi 39,5 litre olarak tespit edilmiştir. Aylık süt harcamasının, toplam gıda harcaması içindeki payı ortalama %5,3 olarak tespit edilmiştir. Süt tüketiminde ailelerin 0-10 yaş grubu çocuk sayısı etkili bir faktör olarak gözlenmiştir. Ailelerce tüketilen sütün % 46,3'ünü açık süt oluştururken, % 53,7'sini ambalajlı süt oluşturmaktadır. Açık sütün % 33,7 gibi en büyük bir bölümü hijyenik koşullarda üretim yapmayan sokak sütçülerinden temin edilmektedir. İlde süt tüketiminde önemli sorun olan sokak sütçülüğüne ve açık süt satışına yönelik yasal ve altyapı çalışmaları ile önlem alınması gerekmektedir.
This study was designed to examine the demand for milk and consumer behavior about milk consumption in Şanlıurfa province where social and economical structure are different than its in the other regions provinces of Turkey. The data for the study were collected by a survey method including different income groups of households. According results, the average montly demand for milk for a household was 16,4 litre, while the annual demand for milk for a person was 39,5 litre. Household milk expenditure in total food expenditure was 5,3 percent. Children aged between 0 and 10 are a major determinant for milk consumption in household. In average, it was observed that 46,3 percent of the milk consumed was unpacked, while 53,7 percent of the milk demanded was packaged. The most important potion of unpacked milk (33.7%) was purchased from milk man in the street who does not care of hygienic when its produce. New law and infrastructural investment must be established in order to solve the problems of unpacked milk marked in the provinces.
