Ankara’da tüketime sunulan süt ve beyaz peynirlerde ağır metal kontaminasyonu

Özet
Araştırmada, Ankara İli Kazan, Çubuk, Kızılcahamam ve Yenimahalle ilçelerinden toplanan 36 adet süt ve 40 adet beyaz peynir numunesi ağır metal kontaminasyonu yönünden incelendi. Örneklerin ağır metal kontaminasyonu, Mars-5 mikrodalga kapalı sistem yaş yakma yöntemiyle yakıldıktan sonra VARIAN-CCD Simultaneous ICP-AES cihazıyla belirlendi. Araştırmada süt numunelerinde ortalama alüminyum, kadmiyum, krom, bakır, demir ve nikel miktarları sırasıyla 6, 0.114, 1.016, 4.300, 52.149 ve 2.754mg/l, peynir numunelerinde ise 23.276, 0.073, 2.597, 5.338, 62.567, 2.371mg/kg düzeylerinde tespit edildi. İncelenen süt ve peynir numunelerinde kurşun varlığına rastlanmadı. Peynir numunelerinin alüminyum, krom, bakır ve demir miktarları süt numunelerinden daha yüksek bulundu. Kazan ilçesinin süt numunelerinde 4 metal, peynir numunelerinde ise 3 metal bakımından en yüksek olduğu, bunu Yenimahalle ilçesinin izlediği, Kızılcahamam ilçesinin ise ağır metal içerikleri bakımından en düşük olduğu tespit edildi. Metal kapta muhafaza edilen süt numunelerinde bakır miktarı, peynir numunelerinde ise alüminyum miktarının fazla olduğu, otoyol varlığının süt ve peynir numunelerinin ağır metallerle kontaminasyonuna herhangi bir olumsuz etkisi olmadığı tespit edildi. Sanayi bölgesine yakın yerlerde üretilen süt numunelerinin demir, peynir numunelerinin ise bakır miktarları yüksek bulundu. Sonuç olarak, süt ve ürünlerinin üretiminde kullanılan standarda uygun olmayan alet ve ekipmanlar ile üretim yerlerine yakın sanayi kuruluşları varlığının; süt ve peynir numunelerinin ağır metal bulaşmalarına maruz kalmasında önem arz ettiği kanısına varıldı.
In this research, forty white pickled chesee samples and thirtysix milk samples obtained from Kazan, Cubuk, Kızılcahamam and Yenimahalle districts in Ankara were investigated for heavy metal contamination. Heavy metal level of samples were determined using with wet ashing in Mars-5 Microwave and then VARIAN-CCD Simultaneous ICP-AES. Contamination level of aluminium, cadmium, chromium, copper, iron and nickel were found respectively 6, 0.114, 1.016, 4.300, 52.149 and 2.754mg/l form milk samples, 23.276, 0.073, 2.597, 5.338, 62.567 and 2.371 for chesee samples. Lead contamination was not found in milk and cheese samples. Aluminium, chromium, copper and iron contents of cheese samples were higher than milk samples. It was determined that Kazan district have the highest levels in four metals for milk samples, in three metals for cheese samples. Yenimahalle was the second district that heavy metal contents was highest than two others. Kızılcahamam was the lowest in metal contents of the samples. Using of metal equipments caused higher iron content in milk samples and aluminium content in cheese samples. No negative effects of existence of motorway on heavy metal contents of milk and cheeese samples was determined. But, iron content of milk samples and copper content of cheese samples produced in industry district was higher than samples produced in pastoral district. In conlusion, it is thought that production of milk and cheese with using standart equipment and in the environments free form industry is important to prevent heavy metal contamination to milk and cheese.
