Özet
1500’lü yıllarda hayatımıza giren kahve, beraberinde kahvehane mekânlarını da
getirmiştir. Kahve hem kültürel anlamda, hem de mekânsal anlamda önem taşımaktadır. 21.
Yüzyılda giderek önemi artan kahve mekanları tez kapsamında ele alınmıştır. Yapılan
literatür taramalarında kahve mekanları ile ilgili araştırmaların yapıldığı görülmüştür.
Çalışma kapsamında tercih edilme nedeni ve yaygın kullanıma bağlı olarak belirlenen kafe
mekânı olarak Starbucks markası belirlenmiştir. Konya iline bağlı Meram ve Selçuklu
merkez ilçelerinde yer alan Starbucks kafelerin mekânsal analizleri yapılmış ve
kullanıcılarının tercih etme nedenlerini tespit etmek üzere anket çalışması hazırlanmıştır.
Anket çalışmaları SPSS 22 paket programı ile analiz edilmiştir.
Tez kapsamında öncelikle yeme içme kültürümüzün zaman içinde değişiminden
başlayarak, bir içecek olan kahvenin keşfini, kültürel ve tarihsel gelişimini ve mekânsal
oluşumdaki etkisi incelenmiştir. Kahvehane mekânlarının iç mekân tasarımlarını geçmişten
günümüze analiz ederek, iç mekân tasarımındaki karar ve gelişimlerin, müşteri tercih ve
davranışlarındaki etkileri araştırılmıştır.
Bu amaç doğrultusunda; literatür taraması, dijital haritalama, mekânsal analiz ve anket
yöntemleri ile araştırma yapılmıştır.
Coffee, which entered our lives in the 1500s, brought coffeehouses with it. Coffee is important both culturally and spatially. Coffee venues, which have become increasingly important in the 21st century, are discussed within the scope of the thesis. In the literature review, it was seen that researches about coffee places were made. Within the scope of the study, the Starbucks brand was determined as the cafe venue, which was determined depending on the reason for preference and widespread use. Spatial analyzes of Starbucks cafes located in Meram and Selçuklu central districts of Konya province were made and a questionnaire study was prepared to determine the reasons for their users' preferences. Survey studies were analyzed with the SPSS 22 package program. Within the scope of the thesis, starting from the change of our eating and drinking culture over time, the discovery of coffee as a beverage, its cultural and historical development and its effect on spatial formation were examined. By analyzing the interior designs of coffee shops from past to present, the effects of decisions and developments in interior design on customer preferences and behaviors were investigated. In accordance with this purpose; The research was conducted with literature review, digital mapping, spatial analysis and survey methods.
