dc.description.abstractYiyecek ve içecek alanında yazılan lisansüstü tezlerin son yıllarda önemli bir artış gösterdiği görülmektedir. Buradan hareketle, bu çalışmada 1990-2018 yılları arasında turizm ile ilgili altı anabilim dalında yazılan yiyecek ve içecek ile ilişkili lisansüstü tezlerin belirli parametreler çerçevesinde incelenmesi amaçlanmıştır. Bu amaç doğrultusunda YÖKTEZ’de erişime açık 1421 tez incelemeye alınmış, bunların 164’ü söz konusu konu ve/ya araştırma alanı ile ilgili bulunmuş ve analiz edilmiştir. Elde edilen bulgular turizm ile ilgili anabilim dallarında yiyecek ve içecek ile ilişkili tezlerin 2007 yılından sonra önemli bir artış gösterdiğine, genellikle yüksek lisans tezi olduğuna, çoğunlukla turizm işletmeciliği ile turizm işletmeciliği ve otelcilik anabilim dallarında yazıldığına, neredeyse tamamında görgül araştırma yaklaşımının benimsendiğine, en çok nicel yöntemler kullanıldığına ve verilerinin daha çok turistler ile şeflerden toplandığına işaret etmektedir. Diğer taraftan yüksek lisans tezlerinde kullanılan Türkçe kaynak sayısının yabancı kaynak sayısına göre oldukça fazla olduğu ve doktora tezlerinde ise yabancı kaynakların Türkçe kaynaklara göre daha fazla kullanıldığı bulunmuştur. Son olarak, tezlerin özet bölümünde hangi hususlara ne düzeyde yer verildiği de incelenmiştir.en_US
dc.description.abstractIt is evident that postgraduate thesis in the field of food and beverage have shown a significant increase in recent years. From this point of view, in this study, it was aimed to examine the postgraduate theses written in tourism-related departments about food and beverage between the years of 1990-2018 within the framework of certain parameters. In accordance with this purpose, 1421 postgraduate theses which are open access in the website of Council of Higher Education were examined, 164 of which were found to be relevant to the related research area, and analyzed. Findings indicate that food and beverage related theses written in tourism departments have shown a significant increase after 2007, which are mostly master’s thesis and also mostly written in tourism management, tourism management and hotel management departments. Almost all studies have adopted empirical research approach, and quantitative methods and survey technique have been used predominantly. When the population which data was gathered and the research area were examined it was concluded that the data of the theses was mostly gathered from tourists and chefs and most from more than one city. Additionally, it is determined that the average number of the Turkish references is considerably higher than the number of foreign references used, while in the doctoral theses, foreign references were used more than Turkish references. Lastly, which issues were given place in the abstract section and to what extent were also examined.en_US
