Muğla yöresi çam ballarının fenolik bileşiklerinin ve depolamadaki değişimlerinin belirlenmesi

Özet
Çam balı Basra böceği (Marchalina helenica) aracılığıyla üretilen Dünya'nın çam balı ihtiyacının %90'ı Türkiye tarafından karşılanan bal çeşididir. Bu çalışmada Muğla Yöresine ait Datça, Merkez, Milas, Fethiye, Marmaris, Yatağan ve Ortaca olmak üzere 7 farklı bölgeden temin edilen çam balları 30°C'de 12 ay boyunca depolanmıştır. Depolamanın her 4 aylık periyodundan örnekler alınarak fenolik bleşik profili, antioksidan kapasitesi, toplam fenolik ve flavonoid madde miktarı gibi insan sağlığı açısından önemli olan bazı parametrelerdeki değişimler gözlemlenmiştir. Çalışma sonucunda toplam fenolik madde miktarı 413.2±102.2-600.7±76.0 mg GAE/kg aralığında, toplam flavonoid madde miktarı 101.2±54.3- 402.7±95.0 mg QE/kg aralığında bulunmuştur. Antioksidan kapasite analizinde ise sonuçlar 2.74±0.40- 4.39±0.88 mmol troloks Eşdeğeri/kg aralığında bulunmuştur. Bütün yörelere ait ballarda toplam fenolik, toplam flavonoid miktarlarında ve antioksidan kapasitesine bakıldığında 12.ay 0.aya göre daha yüksek olduğu gözlenmektedir. HPLC ile yapılan fenolik profil analiz sonucunda gallik asit, protokateşuik asit, 4-hidroksibenzoik asit, vanilik asit, siringik asit, kafeik asit, p-kumarik asit, ferulik asit, apigenin, kersetin ve kampferol fenolik bileşikleri tespit edilmiştir. Tüm çam balı örneklerinde tespit edilen en baskın fenolik bileşik 4-hidroksibenzoik asit olmuştur.
Pine honey is one of the honey varieties which is produced via Basra beetle (Marchalina helenica), and 90% of the need for pine needles in the world is supplied by Turkey. In this study, pine honeys obtained from 7 different regions such as Datca, Merkez, Milas, Fethiye, Marmaris, Yatağan and Ortaca of Muğla province were stored at 30 ° C for 12 months. Changes in some parameters that are important for human health such as phenolic substance content, antioxidant capacity, total phenolic and flavonoid substance amounts were observed by taking samples from every 4 month period of storage. At the end of the study, the total amount of phenolics was in the range of 413.2±102.2-600.7±76.0 mg GAE / kg, and the total amount of flavonoid was in the range of 101.2±54.3- 402.7±95.0 mg QE / kg. In the analysis of antioxidant capacity, the results were found to be between 2.74±0.40- 4.39±0.88 mmol Troloxy Equivalent / kg. Honeys of all regions were showed 12th month higher than first month in total phenolics, total flavonoid amounts and antioxidant capacity. Phenolic profiles by HPLC were analyzed. Phenolic compounds: Gallic Acid, Protocatechuic Acid, 4-hydroxybenzoic Acid, Vanillic Acid, Syringic Acid, Caffeic Acid, p-coumaric Acid, Ferulic Acid, Apigenin, Quercetin, Kaempferol. The most dominant phenolic compound in all pine honey samples was 4-hydroxybenzoic Acid.
