Özet
Kazlar, Kars ve Ardahan illerinde küçük sürüler halinde yetiştirilmektedir. Kaz eti geleneksel olarak yetiştirilen bölge insanları tarafından kış aylan süresince tüketilen önemli bir gıdadır. Bu çalışmada, 25 kaz karkasında, kozlardan allnan 42 swap omeğinde, 6 kafestoki kazlanın altlığ ve çiftliklerden toplanan 94 adet kaz. 66 adet tavuk ve 108 adet bildircin yumurtasında Campylobacter juni varlığı araştırdı Sonuç olarak, kaz, tavuk ve bidircanlardan yumurtaya vertikal bulaşma olmadığı saptandı. Kaz altlığının bir bulaşma kaynağı olarak önemli düzeyde (ortalama 2.23 MPN/g) Campylobacter jejuni içerdiği saptandı. Campylobacter jejun taze kaz karkaslanndan campylobacteriosis'e setxebiyet verebilecek ortalama 2.05 MPN/g düzeyinde izole edildi. Kaz altiğinin ve taze kaz karkaslannın insan sağlığını olumsuz yönde etkileyebileceği sonucuna varıldı.
Goose are kept in small flocks in Kars and Ardahan district. Goose meat is a tradionally important food and consumed during winter months by local people. In this study, the presence of Campylobacter jejun was investigated in 25 fresh goose carcass, 42 cloaka swap samples taken from goose, 6 beddings samples taken from 6 cages. 94 goose egge. 66 chicken eggs and 108 quail eggs collected from farms. The results showed that there is no vertical contamination of Campylobacter jejuni froom goose. chicken and quails to their eggs. it was determined that goose beddings contained Campylobacter jejuni at important levels (mean of 2.23 MPNg) indicating gooose beddings as a contamination source. Campylobacter jejuni was isolated from goose carcasses at the mean level of 2.05 MPN/g that can cause campylobacteriosis. It was concluded that fresh goose carcasses and goose beddings may affects human health in negative.
